Weekend Wrap-up

You know it's late when....  You type the title of this post & instead of "Weekend" you somehow type "Weed"!  BAHAHAHA!  I don't know where that came from but hey, it's late & I'm STILL on the computer!!!  No worries though, I want to blog so, this is fun stuff!

Soooo now that we got off to such a fun start, I'll tell you how fun my weekend was!

Friday night we did nothing!  Literally nothing & it felt great!

Saturday morning we got up bright & early & headed north abou 45 min to watch Matt's 4 year-old nephew play soccer.  SUPER CUTE!  Here's an action shot:

The rest of the day M & I did some shopping around town, I'll show those fun finds tomorrow.  And then we watched the Rangers game on TV Saturday night. Womp, Womp Womp!

Sunday afternoon M & I took a cruise on our motorcycle - it was such a beautiful day I'm so glad we had time for a Sunday cruise!  We went to one of our fave places in Cowtown for a Sunday cruise - Love Shack in the Stockyards.  We used to always cruise there when more of our friends had bikes so it was fun to go back & visit!  If you're ever in Cowtown & want a fun place to visit that always has live music - visit one of the two Love Shack locations that Chef Tim Love has here in town!  (He'll soon be opening up "The Wood Shed" in town also, right along the Trinity River & Trinity Trails!  Can't wait!!)

After our cruise around town we spent the evening with friends grilling steaks & corn on the cob, celebrating a birthday & wathching our RANGERS win game 4!!!

We didn't have too much of a crazy weekend but, it was nice to be low key & we still had fun!  I hope everyone had a GREAT weekend and hope you survived Monday... However you had to spend it!

I'm Alive! I'm Alive!

Well hello there!  Bet you thought I have been off on some grand vaca & forgot to tell ya, huh!?  NOPE!  I've been busy busy this week!  With what?  I don't know!  It's just been a busy week!

As you know, last weekend M left for a fishing trip with his best friend which in turn left me at home to hold down the fort & do what a girl does best... PLAY!

So, Friday evening wasn't too cray cray... I had to make some PC deliveries and then took the pup to Pets Mart!  Then I met my friend Hannah at a fabric store to pick out some fabric for my new pillows that we she was making for me!  It was a low key night but, I had fun hanging out with a great girlfriend!

Saturday morning I had a Pampered Chef party & then rushed home to get to Ranch Bash (Texas Country music festival) later that day!  It was so much fun hanging out with all the girls!

On Sunday, Hannah & I took the pup to the dog park - one of his fave places & then went to do some shopping!  Unfortunately, we only made it to one shop b/c I wasn't feeling too hot from the night before!  (Ugh!  I hate getting older!)  Buuut, I did score some pretty awesome Fiesta plates!  Ever since I was a little girl I've collected Fiesta plates, saucers, and other things for my "Hope Chest".  It was something my Mom & I loved to do together so we always found ourselves in antique stores!

{Ultimate} Chicken Fajitas - Recipe!

When I'm looking for a quick & easy recipe for dinner that doesn't heat up the house, one of my go-to meals is Chicken Fajitas.  You might think it doesn't heat up the house because we grill them but, no that is not the case.  I actually cook them in the microwave in the Deep Covered Baker, a Pampered Chef product.  I used to sell Pampered Chef products so, I have a slew of wonderful kitchen products that I don't know if I could live without - the Deep Covered Baker being one of them!  Ok, so here's how I make some of the best Chicken Fajitas in the microwave...


3-4 boneless skinless chicken breast
1 med Bell Pepper
1/3 med Onion
Your choice of fajitas seasoning - mine are Southwestern Seasoning & Chili Lime Rub
Tortillas - Our favorite, fresh made wheat tortillas from Central Market
Fixings: Cheese, Salsa, Sour Cream, etc

One - Cut the Bell Pepper & Onion into strips & place into the Deep Covered Baker.  Sprinkle the Southwestern Seasoning & Chili Lime Rub so that it covers the vegetables.

Two - Cut the chicken breast into strips and place in the Deep Covered Baker.  Once all the chicken is cut add the Southwestern Seasoning & Chili Lime Rub to the chicken.  Note: There are no seasoning measurements but, just enough to cover the veggies & chicken.  Mix the chicken, vegetables & seasonings together.

Three - Place the lid on the DCB and put it in the microwave.  Cook for 10 minutes and then take it out, mix the chicken & vegetable & place back into the microwave.  Cook for another 5 - 8 minutes and they are done!  While the fajitas are cooking grate your cheese & warm your tortillas.  Serve with Salsa, Sour Cream, Guacamole, etc.
