Our Weekend & a Recipe!

Heeeey y'all! Happy TUESday!  I'm guessing since you're reading this, you survived Monday!?  Good, I'm so glad!

This weekend was fun & low key.  Friday my Dad & his girlfriend came to have dinner with us.  It was nice to have them over & get to spend some time with them!  We all bought tickets for the BIG Lotto on Friday.... & No, we didn't win!  I figured I would be a lucky one since it was my Mimi's birthday that day & she looooved to play some Lotto!  Nope - Notta!

Saturday we did a charity poker run on the motorcycle for one of the Sergeants at my police department & his family.  It was a lot of fun with great friends & for a great cause.

I do however have something for all of you... a {skinny} recipe!!!

Last night I made a new recipe for dinner!  Not sure what you would call it but, I call it...
Ground Turkey & Noodles with Tomato Sauce!

Original, I know.  Anyways, it was inspired by this Skinny Taste recipe. 
Here's what I used:
1 lb Ground Turkey
2 8oz cans of Tomato Sauce
1 box of Whole Wheat Rotini Pasta
Sea Salt & Pepper to taste
Italian Seasoning
Dash of Citrus & Basil Rub
2 cloves of garlic

I boiled the noodles in a pot of water per the instructions on the box.
While the water was boiling, I browned the meat & then added in 1 large garlic piece (or 2 regular sized pieces).
Add in Italian Seasoning to cover the meat & Citrus & Basil Rub to taste.
After the meat is browned & the seasonings have been added, stir in the 2 cans of tomato sauce.
Heat & stir occasionally.

Once the noodles are cooked & the meat & sauce mixture is heated, it is ready to serve.
Top with a light layer of Mozzarella and Parmesan cheese.
This recipe turned out REALLY good!  I promise I'm not just saying it because I made it but, it really was De-Lish!  I figured there to be about 325 - 350* calories in one serving.
*Not sure that's completely accurate but, it's a guesstimate.

  1. I didnt win the lottery either & was so disapointed :( Oh & I'm soo trying your new skinny dish. It sounds delish! Maybe bc I'm starving at work right now. Love that we've became blogging friends! Have a good week too :)

  2. this looks so delicious! i'm always looking for skinny dishes that taste good because my fiance is very picky, but needs to loose a few lbs for the wedding :p New follower for sure!! xx
