Confessions... + 1

Hello!!!  & Hap - Hap - Happy Friday!!!

I haven't linked up with Miss Leslie in a while for a good 'ol confess sesh so, I was thinking I'll pay the Blonde Ambition a visit today!

I've been bad... really bad this week.  Eating out at fast food places some, not cooking at home & wasting the groceries that I've bought.  I don't know what's happened to me!  (Actually I do, it's called mother nature stopping by for a visit).  Alas, next week will be better - I promise myself!

With all this bad eating this week... my co-workers & I somehow conned one of our other co-workers to go to IHOP & get us breakfast!  Happy Friday to us!

After doing the 5DSD last week from Tone It Up, I've decided that fresh collard greens are NOT my thing.  I'll stick with lettuce... & Kale after trying it last night.

For the last 2 days, I haven't done 1 single wedding related task... & I'm ok with that.  I figure we've got about 11 months so, I have plenty of time to plan.  However, that all changes tonight because we're going to look at our reception venue!!!

Can I just say that I never knew just how much photographers cost!?  Geeze Louise!  No, I don't want a $500 job but, I also don't want to give up my first born either!  Thankfully, I've found some that would just like a sample of blood!  Whew!

SURPRISE!  I have a new recipe for y'all!!!

I had several fresh produce things left over in my fridge that I didn't want to go to waste.  So, I started pulling things out of my fridge, called my Aunt to bounce a couple ideas off her & I was onto making Sweet & Sour Chicken Salad!

What you'll need...
Garlic Powder
Sea Salt & Ground Black Pepper
4 Carrotts
1/2 Red Bell Pepper
4 Boneless Skinless Chicken Breast
1 Cucumber
1/2 Lime

1. Dice carrots & bell pepper into bite size pieces.

2. Spray your pan with Olive Oil & place the thawed chicken in the pan.

3. Season chicken with Salt, Ground Pepper & Garlic Powder.  Then, cover generously with the Sweet & Sour Sauce & squeeze 1/2 of a fresh lime juice over all 4 pieces of chicken.

4. Place the diced carrots & bell pepper around the chicken in the pan.

5. Bake in the oven at 350* for 30 minutes.

6. While the chicken is baking, slice up your cucumber & prepare your lettuce & kale.

7. Once the chicken is completely cooked, dice into bite size pieces.  In a large bowl, mix the lettuce, kale, cucumber, chicken, bell peppers & carrots.

VOILA!  You have Sweet & Sour Chicken Salad!
*Use the juices from the chicken as your dressing... delicious!

I'm always a little nervous about making up new recipes for Matt & I ... You just never know how they'll turn out & I hate potentially wasting food!  However, this one turned out really good!

1. What is your current beauty obsession?

2. What is one beauty product you wished you owned?
Hmm... this one isn't really that easy for me.  I don't get into the latest & greatest of many beauty products - just never have.  However, I would have to say that I would like to have more Elf products.  They're all the rave in the blogosphere & who doesn't love inexpensive beauty products!?

3. What kind of post are your favorite to read & write?
Honestly, I enjoy reading post about people's lives.  I'm sort of nosey like that - aren't we all?  & I like to get a little peek into someone else's life!  Same goes for writing blog post, I really enjoy writing about my everyday life - it's a great way for me to remember my life now!

4. What inspired you to become a blogger?
Well, I wouldn't say I was really inspired but, rather I thought it looked fun!  My IRL friend Erin blogs & I always thought it was a fun way to document life.  When I started my blog I wrote mainly about food, recipes & Pampered Chef things.  Continually writing about just recipes got a little boring & it took A LOT of time - maybe it's because I was new to blogging but, it just wasn't the fit for me.  So, I changed things up a little bit & started to incorporate more of ME, sharing my life, DiY projects & of course de-lish recipes!

5. What color nail polish are you currently wearing?
The totally awesome color that I'm wearing at the moment... CLEAR!  I don't normally paint my finger nails a color because I'm on the computer all day & my nails always end up chipping!  I can't stand chipped finger nails - it's tacky looking (my personal opinion).  
I'm currently rocking the OPI Feelin' Hot Hot Hot on my little piggies!  It's such a fun Summer color!

Oh How Pinteresting!

Weekend Rundown!

Hey y'all!  Happy Tuesday!
I hope everyone had a great weekend!  We had a good one but, of course a busy one!

Honestly, I wouldn't have life any other way!  As much as I enjoy our low-key nights at home, it's always so much fun to hang out with our family & friends!

Friday night we went to have fajitas & margaritas with some of our good friends!  We played Washers & Ladder Golf too... let's just say that I need to brush up on my washer playing skills!

Saturday I went to a long time friends bridal shower!  Being newly engaged, it was really fun to see what all I get to look forward to!  Plus, she got some pretty great gifts!

Saturday night consisted of cocktails, wedding magazines, scissors & glue!
I put together my idea wedding binder & I already feel super organized!

We celebrated having wonderful friends, Chelle's 25th Birthday, Hiedi & her boo buying a house & our  engagement!  It was so much fun!

I love getting to spend time with my girlfriends & this weekend is just what I needed!

You Know It's a Rough Morning When...

 - You wake up at 5:45 & should of been up at 5:15

- You then quickly realize that it's in fact Thursday& not Friday

- Still have to shower & get completely ready before you can leave the house

- Leave your breakfast & healthy snacks at home as you rush out the door

- Being about 15-20 minutes late already, your heavy foot gets you pulled over... In the same city you work for the PD!

- Finally arriving to work 25 minutes late

- E-mailing your boss & letting her know you were late & why... hoping she laughs & says "It's ok!"

All in all I know it wasn't that horrible of a morning but, it was more like a domino effect that wasn't going to end!  Thank goodness I'm friends with all of the officers here & he just said in a very stern voice "SLOW DOWN!".  & Luckily, I get to take my time late out of my lunch... whew!  I keep telling myself that today will not be a bad day... just the morning was!

Hopefully your morning wasn't as eventful as mine!

Oh How Pinteresting!

Weekend Rundown - Happy Father's Day!

Hey y'all!  I bet you thought that my post from last week about our beach vacation & engagement was posted by someone else since I haven't been back since!?  Have no fear, it was me who posted it.  Life has just been extremely busy since we've been home.  For whatever reason I can't seem to catch up!  Do you ever feel that way?

Luckily this weekend, I was able to do some catching up!  We really didn't do too much of anything (except house necessities) & had a great weekend!

That pretty much sums up our Friday & Saturday = real exciting!

Sunday being Father's Day, we took my Dad, his girlfriend Sandy & my little brother to the Ranger's game! Our seats were pretty far up because we waited until the last minute to buy them but, it worked out perfectly because we were just barely in the shade! Whew!

My friend Erin & I started the 5 Day Slim Down from Tone It Up this week!  She started Monday & I started today.  So far, everything has been great... but, we'll see after lunch!  I'll be doing a total recap of my progress next week!

Also, I went to my first SPIN CLASS last week & I didn't die!!!  It was actually a lot fun & I'm looking forward to going back again this week!

Week at the Beach... Poppin' Bottles!

Hey y'all!!!  Whew!  What a vacation we had & geeze do I wish we were still waking up to the beach each morning!

Until I get to go back, I guess I can just look at our pictures we took!

To say that it was a great, fantastic, life changing trip is an understatement.  More on that in a few.

Of course Matt & I got a little bit of a late start Wednesday morning... we always do.
After 7 1/2 hours of driving, we finally arrived in Port Aransas!
We got settled in on Wednesday afternoon & we had a little mustache fun that night...

On Thursday morning we woke up bright & early... Well, Matt did to go fishing & I just couldn't go back to sleep.  So, after being lazy in bed for a little while I mozied down stairs to see what everyone was up to & had decided I was going to head down to the beach to workout.  My Aunt abruptly let me know that I needed to stay & help make breakfast... ok, fine.

After helping with breakfast I decided that I would walk down to the beach real quick to see how Matt's fishing was going & just check out the early morning beach scene... still, she wouldn't let me leave the house.

At this point, I'm ticked & it's only 8 am.  I had no idea I had to ask permission to do what I wanted on vacation!  So, I stomped (yes, I'm 25 & I stomped) upstairs & did my workout there.  I figured if I couldn't go down to the beach I would at least be somewhere I could see it.  So, I get done with my workout & go back down stairs.  Wonder around for a few more minutes & then Matt radios up to us that he caught a BIG FISH that he didn't know what it was & wanted us all to come see it.
All = Aunt, Uncle, 2 cousins & their spouses & a little guy... Oh & me!

So, we're walking down to the beach & I'm looking for some BIG FISH.  We get closer & I realize there is a stranger holding Matt's phone video taping us... hmm.  I'm told to "hop up on the tailgate" multiple times.  Not wanting see a big bloody fish, I was reluctant to "hop up on the tailgate".

After a few seconds of being in the middle of everyone & then realizing what was in the sand... this is what I saw...
& I SAID YES!!!!!

2 1/2 hours of drawing in the sand, 5,000 faux red rose petals & we're ENGAGED!!!

Oh, & a little bling

We celebrated & popped bottles by 10 am!

I still can't believe that we're actually ENGAGED!
After almost 3 1/2 years of being with my best friend, I finally get to marry him!

& yes, I've already started wedding planning!!!  :)

*Somehow we ended up with 3 videos & no still pictures.  I'm working on turning videos into still pictures & will share more with y'all when I'm done!

The rest of the week didn't quite compare to Thursday morning but, we had a great time with our family!

On our way home on Sunday we stopped in Seguin, TX where we thought it was a Pecan farm & we would go buy some.

No Pecan farm... just some banquet hall that had the "Worlds Largest Pecan" sitting in front of it.

Saying that I had a "case of the Monday's" on Monday is an understatement!  I was not ready to be back at work!  However, I am so glad to be back in our little routine of life & SO EXCITED to begin planning our wedding!!!

Life is Good Today!

I blog over at The Good Life . Where did that name come from, you ask? Well I had always had this Bible verse on my facebook "about me" section and when I was setting up my blog I just happened to run across it. It was perfect. "He fills my life with good things." Psalm 103:5 Could there be a better name? I think not. Even on my worst days, God is good to me.

Example... Every day as I sit here typing my little life away in this cube, I remember I have a girls beach trip with my Mom. sisters and niece in just two short weeks and a trip to the lake for my birthday 4th of July festivities shortly after that!

I must get beach prepared.

First and foremost is the trusty ole' beach chair!! This is my most important beach accessory bc I spend my day on the edge of the water where the waves hit so I don't die in the blistering sun.

Secondly is the floppy hat... Serious must. I love a good tan and am not one of those who coats on the SPF 1,000. In my opinion (like it matters), everyone looks better with a little color, but even I know after a little while the face needs to be covered up.

SPF 30... there is no explanation. Wear it.
Or else the rest of your trip is mizzzz....
 and you'll look like Ted..

Good tunes and a few good books are essential. (I can't read while laying out... either my arms fall asleep or neck gets stiff... I don't see how y'all do it... or Maybe I just don't like to read enough.. )

and last but most certainly not least.. no day at the beach is complete without an ice cold beverage... Or 10. My current personal fav is the Shocktop Raspberry!

Anywho, Can y'all tell that I am excited for summer? It's been 100 degrees down here in Mississippi for a while, so we are in full swing!
