Menu Monday!

2 post in 1 day!?  I didn't want to try & cram everything into 1, like I do at times so, as promised last week Menu Monday is back!

I have to admit, I didn't make it to the grocery store yesterday & barely had time to whip these recipe ideas together.  So, looks like I'll be grocery shopping tonight seeing as how we have a busy week ahead, what's new!?

Monday - Grilled Pork Chops, Golden Mashed Potatoes, Cooked Carrots 

Tuesday - Ultimate Chicken Fajitas - we have a meeting with at the church so this is a quick & easy recipe to whip together & rush out the door!

Wednesday - Quinoa Stuffed Bell Peppers - this was on the Menu for last week & we never got around to making it due to me not realizing how much time you need for baking them.  Oops!

Thursday - Breakfast for dinner - probably egg white omelets or something along those lines.

Friday - We'll be out for a birthday dinner for a friend!

I've been wanting to link-up with Kristen & Raven for the past few weeks for their Inspire Me: Healthy series on Thursdays but, have yet to do it.  I guess that's because I have yet to make a serious commitment to getting fit & healthy... again!

So, as I mentioned earlier I am going back to calorie counting with the help of My Fitness Pal app (thanks Callie!), I'll be drinking 2 large glasses of water during the day at work & at least 1 each evening.  By making my meal plan each week, this will ensure that Matt & I both have left overs & will then take them for lunch the next day.  Healthy dinner = healthy lunch the next day!

I also plan on getting in cardio time & toning workouts 4-5 days each week!  I know I can do it because I've done it before, so there's no excuses here!

I won't be blogging about my eating & workouts everyday but, I'm hoping it's a way I can truly keep myself accountable & by linking-up on Thursdays, it's good motivation!
